Chipotle Mayo in Under Two Minutes Recipe

Mayo, the magical condiment that adds a creamy flavor to just about any dish. Many people like mayonnaise on their sandwiches or burgers, I even like to add mine to chicken salad, egg salad, coleslaw, and tuna salad. This homemade mayo is five ingredients and tastes even better than the store-bought stuff that usually contains 10 plus ingredients. Mayonnaise can be tricky for some to make, so be sure to follow the recipe carefully as the emulsion takes place before your eyes. Homemade mayo lasts in the fridge for 4-5 days.


- 1 whole egg (yes, raw)
- 1 tbsp dijon mustard
- 1 cup of flavorless oil (canola oil, grapeseed oil, sunflower oil)
- 2 TBSP lemon juice
- 1 TBSP chipotle seasoning (or choice seasoning, I also love using fresh dill!)
*optional 1/4 tsp of salt


1. Add egg, lemon juice, mustard, and salt to your immersion blender and blend slowly.
2. Next, SLOWLY (one drip add a time) add your oil to the blender while it is running.
3. Once the mayo is thick and creamy stop blending and stir in chipotle seasoning and voila! Enjoy your homemade mayo.
