Cauliflower Rice Bowl

Occasionally, we aren't in the mood for a salad, but we still want a recipe with a lot of vegetables. This recipe has all the delicious flavors of a standard rice bowl, but can be prepared much more quickly. It also packs more fiber and vitamins than bowls made with a traditional rice base.

Candied Pecans

Candied pecans are extremely easy to make and can be enjoyed as a festive holiday snack or even a salad topping. They also make excellent homemade gifts. If you are concerned about the added sugar, there are several other recipes that use monk fruit or zero calorie sweeteners. Although, we have tried those recipes and did not find them nearly as satisfying.

Cheesy Artichoke Chicken

The secret ingredient in this recipe is the cottage cheese. Even if you dislike cottage cheese, it blends perfectly with these other ingredients. This dish is creamy, delicious and easy to cook. We recommend using shredded chicken for this recipe. But if you don't eat meat, it can definitely be left out.
