The best thing about leftover potatoes from Thanksgiving festivities? These PANCAKES! Even as a kid mashed potato pancakes had my heart. Perfect for a weekend brunch with your family. Or you can even use this quick recipe to make mashed potatoes the night before (https://thesaltymarshmallow.com/instant-pot-mashed-potatoes/)

Cheesy Artichoke Chicken

Tags: Gluten Free

The secret ingredient in this recipe is the cottage cheese! I am not usually a cottage cheese fan myself so if that is you too, trust me, you will not even taste the cottage cheese. This dish is creamy, delicious and easy to throw together. I recommend having shredded chicken on hand for this one.

This hearty soup is perfect for a chilly evening. I chose to enjoy mine with a glass of the wine I used in this recipe. Try and pick a very lean ground beef for this recipe.

The easiest way to put together this delicious skillet is to pre-cook and shred chicken on the weekend! I love this quick instant pot chicken recipe that cooks chicken perfectly straight from the freezer (https://amindfullmom.com/instant-pot-chicken-breasts/). I also love to make this dish and have enough leftovers for lunch meal prep the rest of the week.

Turkey Pumpkin Meatballs with Butternut Squash Noodles

Both beans and turkey come together to double the protein and fiber. The subtle sweetness of the brown sugar paired with the cinnamon brings the pumpkin flavor to life. I love the consistency of these meatballs and the butternut squash noodles really dress up this fall-themed meal.

Jack-o-Lantern Sage & Sausage Soup

I could eat this soup all year long. It is definitely fall captured in a bowl. The sage sausage makes this soup. If you are not a fan of Jimmy Dean's sausage feel free to make your own, but do not forget the sage! This is a colorful dish loaded with veggies and flavor.

An easy homemade peanut sauce can take any stir-fry from boring to drool-worthy. I love to combine this easy peanut sauce while my veggies and rice are cooking to give my family a dish that beats any local take-out. The following serving size is for one, but feel free to quadruple for a family-sized portion.

Looking for a fun date night or a hands-on activity with the kids? How about veggie rolls prepped for this week's lunches? These rolls are a simple way to add color and vegetables in your diet. After all, rich colored vegetables are packed with phytochemicals, phytonutrients, and antioxidants that help your body fight inflammation, prevent disease and guard you against illness. Mixed Eggplant Pan

Tags: Vegan,Vegetarian,Gluten Free,Dairy Free,Paleo

Eggplant can have a bad reputation for its squishy texture and unpleasant taste! Well, I'm here to tell you that 3 out of 5 of my roommates who once avoided eggplant loved and approved of this easy to make veggie bake. This bright purple vegetable is packed with potassium, vitamin C, folate, and vitamin K. Add variety into your diet by adding this baked veggie pan to your meal. This is one of my go-to recipes for sneaking in eggplant for those who dislike eggplant. When preparing the vegetable you can choose to decrease the fiber by removing some or all of the skin. I personally like to leave the skin on. Let us know what you think by tagging #Bauccoeggplant in your creation!

Quick Lemon Dill Wahoo

Tags: Gluten Free,Dairy Free

Here in Hawai'i Wahoo fish is also called Ono! ?Ono in Hawaiian translates to "delicious." This quick instant pot recipe was just as delicious as it was easy to prepare. I started with frozen fish and ~20-25 min later the fish was plated and ready to savor! I served my fish with a side of basmati rice and a spinach salad tossed with poppyseed dressing, grapes, lemon juice, and almonds.

3-Bean Veggie Chili

This veggie chili really does cook itself. I am not sure an easier crockpot recipe exists, and it is a winter staple in our house. It is a great way to introduce a hearty, satisfying meatless meal to even the biggest carnivore! A favorite training meal of mine is a baked sweet potato, topped with sautéed greens, a generous ladle of this chili and some avocado slices, as pictured.

Probiotic Kimchi Tacos

I enjoy trying new things and here in Hawai'i kimchi is becoming increasingly popular. Kimchi, also spelled kimchee, is a popular Korean dish made of fermented cabbage and radishes soaked in a red chili sauce and a combination of spices. Kimchi can be found in the refrigerated section of the grocery store, although, this probiotic filled food is also easy to make at home. The distinct flavor from the fermented cabbage and radishes give this taco recipe a delicious and exciting twist! The following recipe makes 8 tacos.
